Alyssa gets you ready for the hill... with a great breakfast!

Winter has arrived and I am psyched. It's 4 degrees here in Montana and the kiddos are bundled up.  I didn't have them walk today, I was getting a bad rap around town for having them walk in the elements.  Come on, when I was growing up I used to have to walk in 5 feet of snow... oh wait that was my parents.  Have I turned into my parents? That's a whole 'nother" blog post.

Here's a great way to get your wintery day started.  My kids are loving it (and they are picky!). Perfect to get them fueled up before skiing. Thanks Cooking Light!

Baked Oatmeal

Ingredients

·                                 2 cups uncooked quick-cooking oats                             
·                                 1/2 cup packed brown sugar
·                                 1/3 cup raisins $
·                                 1 tablespoon chopped walnuts $
·                                 1 teaspoon baking powder
·                                 1 1/2 cups fat-free milk $
·                                 1/2 cup applesauce
·                                 2 tablespoons butter, melted $
·                                 1 large egg, beaten
·                                 Cooking spray

Preparation

                   Preheat oven to 375

2                          Combine the first 5 ingredients in a medium bowl. Combine the milk, applesauce, butter, and egg. Add milk mixture to oat mixture; stir well. Pour oat mixture into an 8-inch square baking dish coated with cooking spray. Bake at 375° for 20 minutes. Serve warm.

Alyssa's adaptations- we are not a fan of nuts or raisins - they are stand alones, so I leave them out.  I add a teaspoon of cinnamon to the dry mixture and a teaspoon of vanilla to the wet mixture.
